Hi! Hope the long Labor Day Weekend was kind to you and yours:) Still hard to believe that Fall is right around the corner. I don't know about the rest of you but we have an abundant supply of Roma Tomatoes still growing! Thankfully, my hubby found a recipe online at allrecipes.com for some Roasted Salsa. YUMMO! After whipping it up today, I decided that you all needed the recipe as well, to try if you want:) I highly encourage you to!
Roasted Tomato Salsa (submitted by KATKRO)
12 roma (plum) tomatoes 1 teaspoon ground cumin
2 cloves garlic, unpeeled 1/4 teaspoon salt
1 small onion, quartered 3 tablespoons fresh lime juice
1 jalapeno chili pepper 1/4 cup chopped fresh cilantro
(seeded)
1 1/2 tablespoons olive oil
Preheat the broiler
In a medium baking dish, place roma tomatoes, garlic and onion and jalapeno chile pepper. Drizzle with olive oil.
Checking often, broil 5 to 10 minutes, or until outsides of vegetables are charred.
Remove vegetables from heat. Remove and discard tomato cores, jalapeño stem and garlic skins.
In a food processor, coarsely chop the charred vegetables. Transfer to a medium bowl and mix in cumin, salt, lime juice and cilantro.
